Yummy Healthy Brownie Bites

For anyone looking for a healthy version of a traditional favorite dessert, these brownie bites are gluten-free, vegan, and contain no processed sugars. As healthy as they are, they’re sweet and fudgy enough to please everyone. These yummy treats provide a boost of nutrient-dense energy, and are high in protein, good fats, and antioxidants.
You will need:
- 3/4 cup almonds
- 1/2 cup cashews
- 1/2 cup walnuts
- 2 cups loosely packed pitted dates
- 1/3 cup cacao powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon Himalayan salt
- shredded coconut or hemp seeds for coating the finished brownie bites
Place the almonds and cashews in a food processor and process until very fine.
Next, add the dates and walnuts, and process until crumbly, but not so long that they stick together.
The third step is to add the cacao powder, salt, and vanilla extract, and process long enough that the mixture is sticky and holds together, but not too long, or the mixture will become too oily.
Now comes the fun part! If you have kids, they will definitely want to help.
Place the mixture into a bowl, and with clean hands, form into 2” balls.
Put a handful of shredded coconut or hemp seeds on a dinner plate and roll the balls in the coconut or hemp until the surface is coated.
