Tea Vinaigrettes, Part 2

 

In case you missed last week's Vinaigrette Recipes, we're doing a summer salad series on how to transform your salads with tea-based vinaigrettes. This week we have something ultra-special: a Peach Rooibos dressing (that tastes like liquid candy) and a Smoky Sesame Vinaigrette. It makes eating healthy so much fun, and makes it easier to enjoy summer's bountiful fruits and vegetables. You'll love these! Let's get started. 

 

Peach Rooibos Vinaigrette

2 Peaches

2 tbsp. White Wine Vinegar

¼ cup Olive Oil

4 Dates

1 cup Berry Blush Rooibos

¼ tsp. Salt

 

This dressing tastes amazing with strawberries, nuts, and feta-type cheeses (I like to make almond-based feta). It works well over both soft greens (like mixed baby greens) and tougher leaves as well. For an oil-free version, try replacing the oil with avocado, or you can even make it fat-free by omitting the oil entirely! 

 

 

 

Smoky Sesame Vinaigrette

1 cup Russian Caravan

1 tbsp. toasted Sesame Oil

6 tbsp. roasted Sesame Tahini

2 tbsp. Rice Wine Vinegar

3 tbsp. Tamari  

2 Dates

¼ tsp. fresh Thyme

¼ tsp. Red Chili Flakes (optional) 

 

This dressing is versatile, and you can tweak the amounts of different ingredients, or add other spices, to change the flavor profile. It works wonderfully in salads that have peppers, baby heirloom tomatoes, or seaweed.
