Summer makes for the best salads! We wanted to show you different ways to use your favorite teas in recipes, and salad dressings are a great way to use them. In the first installation of this summer salad dressing series, we're giving you two great recipes: a fat-free Strawberry Pomegranate Vinaigrette, and a Blueberry Mango Balsamic dressing. Let's get started.
Strawberry Pomegranate Vinaigrette
1 cup fresh Strawberries
1 cup strong cold-brew of I Heart Pomegranates
2 tbsp. Apple Cider Vinegar
4-5 large Mejdool Dates, pitted
1 pinch Himalayan Salt
Blend all ingredients together, and you're done! This pairs great with nuts (macadamias are wonderful), coconut, and herbed cheeses (my favorite are nut-based goat-style cheeses).
Mango Blueberry Balsamic Vinaigrette
3/4 cup strong cold-brew of Blueberry Thrill (do not oversteep, as this will get bitter)
1 medium Red Mango, ripe
1/4 cup Coconut Oil, melted
1/2 medium Avocado
2 tbsp. Balsamic Vinegar
1 tbsp. Lemon Juice
1/4 tsp. Vietnamese Cinnamon
1 Date, pitted (optional)
2 leaves Basil
Salt, to taste
This dressing is rich but mild and complex, and works well in salads that feature sweet fruits.
