If you've been in the store lately, you will have noticed our new Butterfly Blue Pea Flower tea, a flower from Thailand known for its brain-boosting power, mood-enhancing qualities, and of course, its gorgeous blue color. In this post, we show you how to make a simple but delicious smoothie bowl with this tea. It's raw, vegan, paleo-friendly, loaded with antioxidants, minerals, and fiber, has no added sugar, and is very hydrating. You can see the video here!
You will need the following ingredients.

Suggested toppings (mix and match):
First, add the pea flowers to a french press or diffuser. Crack open the coconut with a cleaver or Coco Jack and pour the coconut water into it. Allow the tea to cold-brew in the coconut water for at least 30 minutes. You can also brew this overnight in the refrigerator.

Scrape out the coconut meat by using the back of the spoon to pry the flesh away from the shell. Add it to a blender, along with all the brewed tea and soaked cashews. Blend the mixture until it is completely smooth. You should not see any bits of coconut or cashew- it should look perfectly homogeneous, and have a pastel blue color. Pour this into your serving bowl, and if you wish, you can put it in the fridge to let it thicken further before adding your toppings (this is totally optional). Add your toppings and serve!
