Nutty Rawvocado Wrap Recipe

 

To my long-term customers who have stuck with me from the restaurant days and have been asking me to publish a cookbook of all the recipes, this is the recipe for the Nutty Rawvocado wraps! This flavorful raw food recipe, with tangy Southwest seasoning, provides heart-healthy fats, plenty of plant-based protein, and loads of fiber. It's like guacamole but more substantial and satisfying, as it contains seeds and nuts. This dish makes a healthy and delicious addition to the Thanksgiving table. It's easy to prepare, and the only advance prep you have to do is to soak the walnuts overnight, and rinse them the following day.

 

So let's get started!

 

You will need:

  • 1 cup raw sunflower seeds
  • 1 cup raw walnuts, soaked overnight, rinsed, and drained
  • ½ cup raw pepitas
  • 1 cup onion, very finely chopped
  • 4 cups heirloom tomatoes, finely diced
  • 1 cup cilantro, chopped superfine
  • 8 ripe avocados, finely diced
  • 2 cups flavorful sprouts: onion, radish, or mixed
  • 1 cup fresh lemon juice
  • ½ cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon cumin powder
  • ¼ teaspoon chipotle powder

 

For the wrap, you will need

 

 

Pulse the seeds and nuts in a food processor, or mash them in a large mortar and pestle. Mix in the onions, tomatoes, and cilantro, and stir to combine well. Add lemon juice, olive oil, salt, cumin, and chipotle. Blend well. Gently fold in the avocado.

Place a line of the filling in the center of your leaf, and pile on some sprouts.

Roll it up and eat it.

Feel free to customize. Add thinly sliced radishes, shredded carrots, toss in some sunflower seeds or pomegranate seeds. Substitute with what you have in the fridge. Avocados make it creamy and they do help hold everything together, but you could also do the same thing with a raw nut butter like almond, cashew, or tahini. The moral of the story is, healthy foods are easy, you don’t have to plan ahead for weeks, and they taste pretty dang delicious.
