I've just arrived in India, and one of my favorite things about visiting Asia is eating all the tropical fruits! Papayas, mangoes, lychees, coconuts, jackfruit... you name it! I love experimenting with tea recipes, so in this post, I'm sharing a refreshing tropical cooler that's perfect for this time of year! You can find all these fruits, plus many new kinds of exotic fruits at Asian markets (I like Mekong Supermarket), so you can still get your hands on these fruits if you don't find them at your local supermarket.
You will need:
To make this, crack open both coconuts and pour the coconut water into a diffuser or pitcher for cold-brewing. Next, add the Happy Place leaves to the coconut water and cold brew the tea according to the instructions. You can even cold brew it in the fridge.
When the tea has steeped, strain the leaves and add all the fruit. You can experiment with different fruits as well! Allow the fruit to infuse for at least one hour (longer is better), chill, and serve. Enjoy!
